This recipe might just change your life. When I decided to whip up something with carrots for today?s Healthy Plate Challenge, I knew immediately what I wanted to make: Carrot fries!!! If you like sweet potato fries, these are for you. If not, give them a try anyway?after all, that?s what this challenge is all about! And what could be better than a ridiculously healthy side for your yummy burgers?
I used baby carrots, but you can just slice up big carrots to make your ?fries? if you want. Drizzle a teeny bit of oil (olive or vegetable works great; I probably used about a teaspoon) over them, then sprinkle with salt, pepper, and your favorite seasonings. Mix well. I used Cajun seasoning, which was awesome, but you can use anything you?d like (Garlic, chili powder, cayenne, etc.). If you want more seasoning ideas, check out the recipe from Voracious Vander, which I based mine off of.
Place on a baking tray that?s been sprayed with cooking spray or drizzled with oil.
Bake at 425 degrees for about 25 minutes, or until they?re softened and slightly browned. Serve with burgers, sandwiches?or anything!
The Verdict: The hubby and I both loved these! They were the perfect texture and flavor to substitute for fries. And the number one sign that this is an amazing recipe? My husband didn?t even ask for ketchup?and he uses ketchup on?everything.?I?m definitely keeping this recipe in the rotation!
I reeeeeeeaaaally hope you try today?s recipe. It?s delicious, and just a few ?fries? will help you meet your Vitamin A quota! Carrots are also a good source of fiber, Vitamins C & K, potassium, thiamin, niacin, vitamin B6, folate, and manganese.
